Gluten-Free Flour Blend For Breads ( This is the blend for recipes that call for yeast)

Ingredients
1 cup brown rice flour
1 cup sorghum flour
3/4 cup millet flour( if millet flour is not available, chickpea flour may be substituted.)
1 cup tapioca flour
1 cup cornstarch
1/3 instant mashed potato flacks (unflavored)
Directions
Combine all ingredients in a large bowl. Whisk to make sure flours are evenly distributed.
The recipe can be doubled or tripled. Store ion an airtight container in the refrigerator.
