Mom's Best Sweet Potato Pie

By W Fox Submitted at November 13, 2011

  • 2 cups sweet potatoes, mashed (approx. 1.5 big sweet potato cubed and boiled for 15 minutes)

  • 1/4 cup (4 tablespoons butter), softened

  • 3/4 cup packed brown sugar

  • 2 eggs

  • 1/2 tsp salt

  • 1/4 tsp ground ginger

  • 3/4 tsp ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 3/4 cup evaporated milk (half of a 12oz can)

  • 3 Tbs heavy cream

  • 1 9 inch unbaked pie crust

  1. Preheat oven to 400 degrees F (200 degrees C). Mix sweet potatoes, butter, brown sugar, salt, cinnamon, ginger and nutmeg in a bowl until well combined. Add eggs, evaporated milk, and heavy cream. Mix everything until completely smooth and all the ingredients have come together - approximately 5 minutes using a Kitchenmaid.

  2. Pour mixture into an unbaked pie shell all the way to the top leaving about 1/4" space from the top edge of the crust. Bake for 15 minutes and then reduce heat to 350 degrees F and bake an additional 30 minutes or until done. Enjoy!

Nutritional Facts

I choose sweet potato's over the pumpkin mix so I can control the ingredients. This recipe is naturally sweet and only uses 3/4 cup of brown sugar. I usually make 4x the amount to give to family while out visiting.
