Harvest Potatoes and Cihicken-a CROCK-POT MEAL

Ingredients

  • 1-1# bonelss, skinless chicken breast, cut into 1" pieces

  • 2-3Tbls. flour

  • 3-1/2 tea. salt

  • 4-1/4 tea. pepper

  • 5-12oz. small, red potatoes, scrubbed and halved

  • 6-2 cups baby carrots, cut into 1/3"s

  • 7-2 stalks celery, cut into 1/2" pieces

  • 8-1 large onion, chopped

  • 9-1 can (4oz) mushrooms, draines and sliced

  • 10-2 cloves garlic, minced

  • 11-3/4 tea. dried thyme

  • 12-1/2 tea. dried sage

  • 13-1 cup low sodium chickem broth

  • 14-1 Tbls. unslated butter, soften

Directions

  1. 1-In a small bowl mix togther the chicken and 2Tbls. of flour, salt and pepper, add to prepared crock-pot. I spray with pan spray, canola oil flavor. Stir in potatoes, carrots, celery. onoin, mushrooms, 1/2 tea. thyme and sage & broth. Cover and cookon HIGH for 4 hours. To cook on LOW, 6 hours.

  2. 2-In a small bowl stir together remaining flour and butter until paste forms. Push chicken and vegies to one side and add paste and remaining salt and thyme into crock-pot bowl. Mix well. Blend in vegies and chicken with broth you just prepared and cook 1 hour more, on HIGH, or until thickened.

This is a great recipe. Very tastey and quite filling. It's dinner all in one. Add a salad to it and you have perfection. LOL…Valentine Lady

I really like using my crock-pot, so I will be trying this recipe, minus the mushrooms.
